How to make ice cream shaped eggs & waffle baskets

April fools’ day is coming up and I have been sneaking around my family to make this Ice cream shaped eggs. I am not big on pranking people but when I saw this egg mold a few ideas came to mind. Unfortunately, my first idea of making lemon cake shaped eggs with lemon pudding inside didn’t work. The mold has a good design, but any soft dessert is hard to take out. I read in some reviews that people attempted to make jello shaped eggs but also failed like I did with my cake. So, I switched gears and made these ice cream eggs instead, here is how;

Materials

Ingredients

  • 2 1/2 cups of Ice cream (any flavor you like. I used vanilla)
  • 3 – 4 cups of White chocolate wafers (separate)
  • Colorful candy melts (optional)
  • Waffle bowls

Begin by melting the ice cream. Luckily my microwave has a feature that melts the ice cream and still keeps it cold. It takes 2 1/2 – 3 minutes. Next, place the egg mold on a flat plate. Then use the funnel to fill each egg with the melted ice cream. Transfer the egg mold to the freezer and wait for them to harden. This will take a few hours or overnight. In the meantime line a storage container with parchment paper and keep a few strips of parchment on the side. They will be used to keep the eggs from sticking to each other. Once the ice cream eggs are hard, remove them from the mold and place them in the storage container. Keep them in the freezer while you prepare for the next step.

Shell

To make the shell use candy melts. I find that the best way to melt these guys is by using a melting pot. It keeps the candy melts at a the same temperature and the bowl is a perfect size for dipping. If you don’t have it use a double boiler or a microwave, but do only a few seconds at a time and stir constantly. They can burn super fast. Begin by turning the candy melt machine to the melting option, then, add 1 cup of candy melts to the bowl and stir until they completely dissolved. To make colorful eggs add color wafers. I used 5-8 pink wafers and I got a beautiful light pink egg. Also, turn the machine to the warm option and add more candy melts as needed. Don’t add food coloring to the candy melts, unless your food coloring is oil based. Water will ruin your candies. Once the wafers melt, take eggs out of the freezer it’s time to dip. Insert a skewer in the bottom of the egg and dip into the bowl. To make things easier, tilt the bowl as you lower it. Next, lift the egg to let all the candy melt excess fall off. Work fast because the coating will harden quick. If needed use a toothpick to pop any bubbles. After the eggshell hardens, remove it from the skewer and place it back in the freezer. Avoid grabbing them from the top as this will leave fingerprints.

Waffle

Make homemade waffle bowls with a waffle bowl maker. They come out fluffy and crisp. Another option is to cut waffles into little strips to dip them in the egg once it begins to melt.

Serve the eggs in top of an egg stand and provide a little spoon to crack the egg. Also serve with waffles and fresh berries.
