Red, White, and Blue Ice Cream Sandwiches
July is here! Make batches of these red, white, and blue ice cream sandwiches to celebrate all month.
Ice cream sandwiches are already awesome, but aren’t these small ice cream sandwiches the cutest most festive treats ever?
I am a sucker for baking molds. So when I saw this ice cream sandwich mold, I had to get it!
The mold comes with a recipe to make the chocolate cookies, but I substituted the cocoa part of the instructions with flour and added some blue and red food coloring gel to make these yummy treats. Here is how;
Red, white, and blue ice cream sandwiches
- Ice cream sandwich mold
- Vanilla ice cream
- Red and blue food coloring gels
- Wax paper bags
- Patriotic stickers
- Washi paper
First, follow the recipe that comes with the mold, but replace the cocoa powder with flour.
Once the batter is ready, separate it into two bowls and add one or two drops of red food coloring gel to one and blue food coloring gel to the other. Mix until all the food gel blends in and there is no marbling.
Then, use a small spoon to fill each mold and bake. After baking the recipe asks for freezing the cookie molds.
Once the cookies are cold, insert the white mold into one of the brown cookie molds and scoop ice cream into each slot. Press and flatten the vanilla ice cream. Then, flip it into the second cookie tray and return to the freezer for at least an hour.
After that, press firm to separate the ice cream sandwiches from the mold. If they look uneven, use a paring knife to shape them and clean off any excess ice cream.
Decorate and store
Decorate wax paper bags while the ice cream sandwiches freeze.
I used stickers to decorate the front of the bag and washi tape to secure each bag.
Place the red, white, and blue ice cream sandwiches into each bag, work fast, and store them flat to prevent them from shifting.
